I think it's because they're all cute and badass simultaneously. And Eevee is a gamewinning mon.
It's got an awesome design, and it's a genwun that has evolution across most gens which make it popular among pokefans of all types.

Incredibly late, but yes, she's Korean and learning Japanese. I'll consider trying to translate the comic later, but frankly I'm a little too self-conscious about my Japanese right now and if anyone else is able to do it it would be best.

Vaporeon, Espeon, and Sylveon are by far the best Eeveelutions when it comes to battle. Poor Glaceon gets the short end of the stick. At least Leafeon has SOME moves, but Glaceon is cursed with the single worst monotype possible, a lack of moves, and a lack of speed. On the bright side, when Glaceon DOES get an unresisted ice attack off it does solid damage, whereas grass is just a bad STAB.

Vaporeon is your typical bulky water, soaks up hits and has great typing. Espeon's saving grace is its ability, it often tends to run dual screens. Really your moveset depends on the rest of your team.
Umbreon is a lot more niche, with its only real offensive move being Foul Play and dark-type being of questionable quality. It's very bulky so unboosted neutral hits are more or less irrelevant. It's certainly not useless, but it's harder to find a good spot for Umbreon than it is for Vaporeon.

Vaporeon: I usually run Scald/Wish/Protect/Baton Pass. Just your standard cleric.
Espeon: I actually have two sets that I've been messing with. One is just a standard dual screens set; self-explanatory. The other is a gimmick set that tries to make use of Calm Mind and Stored Power.
Umbreon: Heal Bell/Foul Play/Toxic/Moonlight. Heal Bell and Moonlight to keep itself healthy and cure the rest of the team in the case of the former. Foul Play and Toxic for dealing damage directly and over time. Gotta love how bulky it is.
Hey guys. I have every book in the カレーなる一族‐ブイズー doujinshi series (with the latest one from C89 on the way), and I plan on scanning/uploading them all eventually (and hopefully translate them too). I wanted to do this for a while, since I absolutely love Nest/Kurozu's works ,and it's a crime that nobody else has uploaded scans yet. However, it took me until just recently to work up the courage to do so.
Anyway, I'm scanning in the first book as we speak. I should have the raw scanned/uploaded by tomorrow, and I'll start translation work after that. My Japanese is super rusty though, so that may take a while. I also have to save the second book (In Winter) for later, since I only have one copy of that book.
And here's one page to show that I'm not bullshitting about this.
