Being able to play as class requires that the race in question on a meaningful scale is able to fulfill the role of at least one specc of that class.

Warriors is something everyone can be as it just requires that you're able to learn how to wield a large weapon at a high level or use a shield to block attacks.

A lot of evil races can be shadow priests and gnomes can be doctors at a level that is on par with a holy priest.

Being a paladin requires you to use the light to imbue your attacks and bless your allies.

A forsaken for instance would get burned by the light and can't be a paladin, but can be a shadow priest just fine.
