Even though there isn't much tracking there that clip is hardly a good defence of the game. The enemy is just very slowing and clumsily spamming the same slow and clumsy combo.

It looks like it is in slo-mo and where the DS3 clip shows the enemy doing a spinning back hand to protect itself that enemy just awkwardly goes through a reset animation and continues spamming the same move. He literally just stops, turns on spot without moving his feet and does the exact same move again.

Now they've just gone back to:

Having to land a charged heavy on their back before you could execute the backstab just like you have to parry an attack before you could execute a riposte was a back improvement as it eliminated backstab fishing while preserving the real purpose of the mechanic.

was a perfect and equal system. Just having to walk behind the enemy with no further requirement again is a step back.

The purpose of the backstab is to reward the player with bonus damage when they are able to approach the backside of an enemy while they are in a vulnerable state.

Bloodborne achieves this by making it so that when an enemy leaves itself open you are given an opportunity to EARN a back stab on an vulnerable enemy but doesn't allow you to just bait them like in the Souls games.

Being able to just circle around an enemy with your shield raised and then just tap R1 the second there was an kind of delay in them turning wasn't a good element of that game. The fact that you could be facing an enemy that was engaging you and had it's shield raised and just run behind it and cheese a free backstab out of it was categorically a problem.

A backstab should be something you earn when an enemy leaves itself open. It should not be a case of just spinning in a circle and tapping R1.

Also the dashing in BB is much faster than rolling in Souls games which means it's much easier to get behind enemies, so they needed to balance it out somehow.

It got butchered because the execution was fucking horrible, you can sorta notice the result of that on screenshots like these >>324402261. It's pretty noticable that terrain in the background was originally intended to be walked upon. I really hope we get something as amazing as the storm king fight in DaS3. I know it's an unpopular opinion, but I loved that fight so much because of the storm ruler sword gimmick.

The general point seems to be that Dark Souls 1 had limited amounts of tracking on some enemies to make their attacks a threat without being unreasonable and that Dark Souls 2 while it had some enemies that were like Dark Souls 1 was there were far too many enemies that would track flawlessly a full 360 degrees to an excessive degree.

Sure you can point out that the knight in that clip don't have unreasonable tracking but you can't point to the DS1 enemy that does 360 spins all day erry day like those fire lizards or the giant 2 handed mace dudes. You're comparing the enemies with the most tracking in Dark Souls 1 with the enemies that have the least tracking in Dark Souls 2 and claiming that both examples are reflective of the whole game which frankly is just plain wrong.

Combat isn't always about punishing, that's a very defensive and inactive way to look at combat. I hate to make the comparison to fighting games, but a lot of the time good strings come off of being proactive instead of waiting for your opponent to throw out something you can punish, if you make a game where your defensive options are better than your offensive options you end up with really inactive combat.

I don't have a source. But if the most mundane weapons in the game have artes and every weapon in the beta have artes and it's a core mechanic of the game governed by a present at all times UI element then logically it seems likely that every weapon will have artes.

And as far as every arte having a trail goes it seems likely as the trail seems to be what indicates visually that it's an arte rather than a normal attack at the moment.
