Even though there isn't much tracking there that clip is hardly a good defence of the game. The enemy is just very slowing and clumsily spamming the same slow and clumsy combo.
It looks like it is in slo-mo and where the DS3 clip shows the enemy doing a spinning back hand to protect itself that enemy just awkwardly goes through a reset animation and continues spamming the same move. He literally just stops, turns on spot without moving his feet and does the exact same move again.

It has an absurd tracking. I saw a lot of people trying to go for a backstab (because it seems obvious) and it never worked. The backstab just whiffed and then they were sent flying.
That should be applied to all big slow shield bashs, because in Dark Souls, apart from shoving people down archways, they did no damage, high stamina consumption and high recovery.
At least this way they can compete with smaller shields, and can synergize with weapons by being able to attack as the opponent recovers from stun.

It did, weapon arts use both a large chunk of stamina and some MP, so you cannot spam them, they're very situation as you can see.
They open you to backstabs about as much as being staggered or casting a long spell.

It's high risk high reward, and this is a low level character, I mind you, so it's gonna be less of an issue when you level up enough END.

Souls games have pretty much always been about R1 mashing with a fast weapon that can stunlock, or fishing for backstabs or counter thrusts.
I didn't play bloodborne but from what I understand you have to charge up an attack to then backstab.
How is this ever landed in pvp if it takes a second to charge up? Wouldn't the enemy have plenty of time to roll/turn around?

Not really, Bloodborne just made backstabs like parries where you had to execute on an ability with good timing in order to earn them.
Now they've just gone back to:

Having to land a charged heavy on their back before you could execute the backstab just like you have to parry an attack before you could execute a riposte was a back improvement as it eliminated backstab fishing while preserving the real purpose of the mechanic.
Parry = chance to riposte

was a perfect and equal system. Just having to walk behind the enemy with no further requirement again is a step back.
That was the case in Dark Souls 2. You could initiate a riposte after breaking the enemy poise, too.
In the webm you quoted, that's a sword art. The longsword sword art breaks the shield guard and let you initiate a riposte.

The purpose of the backstab is to reward the player with bonus damage when they are able to approach the backside of an enemy while they are in a vulnerable state.
Bloodborne achieves this by making it so that when an enemy leaves itself open you are given an opportunity to EARN a back stab on an vulnerable enemy but doesn't allow you to just bait them like in the Souls games.
Being able to just circle around an enemy with your shield raised and then just tap R1 the second there was an kind of delay in them turning wasn't a good element of that game. The fact that you could be facing an enemy that was engaging you and had it's shield raised and just run behind it and cheese a free backstab out of it was categorically a problem.
A backstab should be something you earn when an enemy leaves itself open. It should not be a case of just spinning in a circle and tapping R1.

Also the dashing in BB is much faster than rolling in Souls games which means it's much easier to get behind enemies, so they needed to balance it out somehow.

It is doable on opponents who've spotted you, but unless your doing a challenge run, the hassle is not worth it. OoK is the only enemy that seems worth it since it has erratic parry timing.

Not him, but yes... You're cancelling mid swing. Swing and wait for your weapon it to return to neutral while holding up on the analog. You skip a ton of animation with consecutive swings and rolls. Also, they had weapons in Dark Souls that had long whiff animations, and they were shit gameplay wise.
This is the same convention that everything from DMC, Ninja Gaiden, and fighting games follow (rapid consecutive nonsensical attacks through cancelling).

But bloodborne is the easiest of the games in the series. The amount of stamina your dodges consume is just laughable, you can prance around like a mountain goat without ever being punished, and the amount of blood vials you get is just abundant. I don't think I even died a single time until I got to Vicar Amelia.

There's nothing methodical or semi-realisitc about Dark Souls, or any videogame with combat, especially not one featuring an undead soul-drinking vampire that constantly resurrects and is several scores stronger, note dextrous, and physically tougher then a war-hardened soldier.

What exactly is wrong with the animations? Could you be more specific? DaS2's anims looked floaty because they were mocapped. Some of DaS3's anims are literally ripped straight from DaS1.

I really hope we get something as amazing as the storm king fight in DaS3. I know it's an unpopular opinion, but I loved that fight so much because of the storm ruler sword gimmick.

The general point seems to be that Dark Souls 1 had limited amounts of tracking on some enemies to make their attacks a threat without being unreasonable and that Dark Souls 2 while it had some enemies that were like Dark Souls 1 was there were far too many enemies that would track flawlessly a full 360 degrees to an excessive degree.
Sure you can point out that the knight in that clip don't have unreasonable tracking but you can't point to the DS1 enemy that does 360 spins all day erry day like those fire lizards or the giant 2 handed mace dudes. You're comparing the enemies with the most tracking in Dark Souls 1 with the enemies that have the least tracking in Dark Souls 2 and claiming that both examples are reflective of the whole game which frankly is just plain wrong.
It was neither hard nor boring. I got it on my first character. People just like to shit on DaS II for not reason, yes it was a let down, but the only hard trophies were getting all the pyromancies and miracles, which you could get on NG++.

The one thing I admired the most about DS1 was that you could see so many different zones from other zones. It gave the environments depth. It actually felt like you were travelling.

Look how the DaS3 animation looks completely unnatural when it has to speed the fuck up on the follow up to maintain the retarded speed the devs want the game to have, compare it to the seamless natural movement from DaS1 how the character has to properly set up again on the follow up before swinging that massive sword.
If you think about it Trick Weapons are pretty dumb practically speaking, and not wearing armor because it's ineffective against the strength of beasts is dumb too, I could see a hunter easily getting by in Bloodborne just by midrolling and having some decent armor would stop a lot of bullshit one-hit deaths.

Bloodborne was cool, but I think one game and a DLC or two is all the setting has in it
Its pretty homogeneous in tone, and one of the best things about the souls games is exploring the varied locations in a diverse world

The flow of time is convoluted, so while it appears to you you're only just now jumping down, the knight already perceives you as having landed and that's why he's rotating to meet your assault.

Combat isn't always about punishing, that's a very defensive and inactive way to look at combat. I hate to make the comparison to fighting games, but a lot of the time good strings come off of being proactive instead of waiting for your opponent to throw out something you can punish, if you make a game where your defensive options are better than your offensive options you end up with really inactive combat.

Everything losing all weight once an attack ends has always been an issue in the series, it's just the most obvious in 3
I didn't mean A/B-team bullshit. I meant the studio as a whole. Souls games have been plagued by a myriad of problems since day 1 of Demon's, and it doesn't look like they're fixing many of them in DaS3.
I, for one, would like to see the current team fired, and competent programmers hired for 3.

That is what the stamina system is for, generally those kind of weapons have huge stamina consumption so you can go in for the attack when they back off to wait for their stamina to recharge.
