Military Armor and Sci-fi armor don't seem to have any protection what so ever. For instance many people will focus on head and chest area and leave things like legs and arms not as protected. What are some good combat armor?

Most video game armor is way too constricting like if you tried to wear it in real life you'd probably pass out from heat exhaustion. It looks protective to have it from head to toe but it can get really hot and sweaty. Games can't really factor that in especially in environments that are really hot.

You're not supposed to protect arms and legs, you're supposed to protect big targets, as in chest and head.
The only attention you should give for your arms and legs is for being as comfortable as you can be when engaged in a fight. Fully covering them with clothing so you protect skin, kneepads, elbowpads for bone protection.
Also, your clothing can't be saggy or baggy, it has to be tight.
That of course is only considered in case of medium-long range warfare and situations with limited gear, other situations like close quarters or chemical warfare have different things in question.

Contemptor class Dreadnoughts from M31 era of Warhammer 40k. Still heavily armored enough to still be immune to all small arms fire and grenades, but maneuverable enough to dodge enemy plasma and missile attacks.

Like how some old Knight armor had interlocking discs for added protection against small arms, but instead sown onto the arm/leg clothing with much better materials used.

Sometimes the lack of armor is understandable for the sake of mobility. Then again you would think in the future we would have developed some sort of ceramic composite that is light but strong.

Honestly, the only problem I have with H5 armor for the most part is that there's not a separate color slider for undersuits, with the default color in team games being black for it. Otherwise most of the armor actually looks good.

We walked 5k on a goat trail in the middle of the night with all that shit and some were carrying mortars and mortar tubes, .50 cal ammo, m240s.

Go look up some behind the scenes stuff sometime. They originally had a higher def version of H3's Mk VI for H4, but when they had a motion capture artist test a replica of the armor plates on it, he could barely move at all because the plates were constantly rubbing against each other.
When we're talking about mjolnir plating being fucking titanium, that's not a good thing. So it's understandable from an authenticity perspective for them to change it.

The biggest issue with the halo 4/5 armour is it looks like bits of armour on top of an undersuit, which it is, compared to earlier designs that looked like additional parts and plates being added to a already perfectly usable suit of armour.

Modern combat is about running fast or carrying heavy things anymore. Basically, infantry is on it's way out to being a very highly specialized and very small part of the military. I don't honestly know why anyone would actually want to be infantry anyway, if you wanna see combat really bad then go to the middle east yourself, no need to waste your time with military BS.
When you run at high speeds, you'll often twist your hips in such a way that many of Bungie's mjolnir wouldn't allow. It would require them to literally bend the titanium plates.
Anyway, this whole thing is silly in the first place. Realistically, all mjolnir armor after mk V should have focused on mobility above protection in the first place. Shields are what protect spartans for the most part, and keep them alive. A charged plasma shot in canon will melt through mk IV, because the heavy plating was designed to protect against small arms fire and shrapnel moreso than plasma fire.

We are working on armor, but only to aide increased speed. Example being spider silk which was the basis of a few new protein strings found that are pretty fucking strong but thick.
The end goal here is to get a guy that wears armor as thick and flexible as a Hanes tshirt that can protect from stabbing, low velocity large caliber and high velocity low caliber. Fire retardant too but anyone can do that.

Mk IV Mjolnir armor was literally NOT designed for plasma burns. It was designed for small arms fire because it was created before knowledge of the covenant existed.
In addition, most titanium plating on spartans was relatively useless against the majority of covenant weapons, and would let spartans survive a couple shots at best. Spartans began surviving under FAR MORE fire when shields became common place, and that served as the main form of defense for Spartans.
What we need is a form of armor that works similarly to a non-newtonian fluid, wherein its default state is relaxed and easily moved and molded, but if met with force, hardens extremely quickly.
Bullets are different from arrows.
Deflection angles are far more severe when a higher velocity is involved. It's impossible to protect with something like that.

Shielding was not effective protection against plasma and was far better are dealing with ballistics, this is not only fluff but is represented in game by shields being taken down faster than plasma.

Stitching video feeds together in real-time is an incredible undertaking, you would need a very, very strong computer to do even low-framerate video, and that cost raises with every camera you add.
