They usually have the widest variety of things they can do. DPS spells, AoE spells, control spells like mind manipulation/paralysis/telekinesis, summoning spells. Some have mage aromor spells that let you be super tanky. If you can craft spells you can become super powerful. It's way more fun to disintegrate some chump with lightning than it is to just stab him. Though, if you wanted to, you could probably stab him with magic.
tl;dr magic can be anything and specializing or becoming great at all spells is fun

It depends on the game. There are rarely games where magic feels satisfying. My favorite RPG that had a great magic system was probably gothic because you became a fucking unstoppable god. In MMOs I usually pick healer because it's the hardest class to play.
