Don't be afraid to read up on the wiki, it helps in this game, and there really isn't much to spoil since it's all in the gameplay

It is up to the player, it's just kind of super obscure. Basically the person with the highest affinity by the end game becomes your beloved. However, if multiple people are at max affinity (which can easily happen if you do a lot of side stuff), only the LAST person you increased affinity with prior to a certain point in the story will become your beloved.

Amusingly, you can change your beloved between two scenes where they show up by changing around affinity values through violence or affection to other characters.

But if this is your first time, go with the fighter -- they're simple, fun, and sturdy. You can play whatever you want, really, it won't affect your game that much since it's not hard anyway, but if you want your pawn to do a specific thing you might need to teach it
You can also use Inclinations to dictate their behaviour

As an example:

I've never felt the love for assassin, just feels like playing a gimped Strider.

As for how they differ, Assassin doesn't have access to the best strider skills (soaring stone, brain splitter, hailstorm volley and Fracture Dart)

Assassin is better off using the sword instead of dual daggers as well since they can just gut large enemies with it.

Magick archer has homing missiles that auto-aim to sticky targets.

They probably do less damage overall, and namely deal in magic damage, but they're overall more versatile and can be a good group-oriented class, which is everything during Bitterblack.

Strider gets way better bow and dagger skills. Fracture dart and downpour volley are both great damage/AoE, and brain splitter fucks shit UP. I'm sure there are others, but those stand out quite a bit.

Also they're slow (fighter has a lightning fast dash to constantly close distances), don't have a block or dodge (only a counter and hyperarmour on certain skills) and have dick all range capabilities

Fighter can tank better because of taunt/block, can move around the battle much faster and actually outputs more damage than Warrior.

Again you can complete the game no trouble as Warrior, it's simply not as good as other classes though.

Assassin doesn't get Soaring Stone or, more importantly, Brain Splitter

The only thing that outdamages Brain Splitter is Mystic Knights Grand Cannon combo or Rangers Tenfold Flurry that can shoot 10 blast arrows per volley. Strider gets Hailstorm Shot that fires 24 blast arrows per use of skill though

Strider is the best at climbing on things but Brain Splitter will always outdamage anything you can while grappling something.

No. They don't forget anything. The only thing that might happen is that your pawn will use a tactic less and less (too complicated, fails to use it every time...). It takes some time though.
You can refresh that by playing a bit again.
You can also check your pawn habits by letting it get possessed: it becomes hostile toward you and will try whatever it knows to kill you.

The attack buffs from fighter and warrior are the main ones you'll want. One is a 10% boost and the other is a 20% boost, and they are multiplicative. I don't remember any others standing out, the ones you'll get between those three classes are all pretty great.

Assassin likes to climb big enemies so your pawn will take after that, climbing things is alright for yellow pawns since they have a skill to slash shit while climbing.

Starting Strider to make my pawn an Archer. Going to mostly use archery skills to kill goblins and shit from a distance, level into ranger, take all the Flurry and Bend skills, and teach my pawn to pick fuckers out of the sky. Then branch into assassin to climb all over cunts and gouge them, with some fighter for the gear carrying augments. Probably end the game playing assassin or maybe Warrior.

I've beaten Grigori 3 times now, and every time has been as a Fighter. I just can't pass up that 2 secon invicibility from Dragons Maw and the Perfect Guard ability. Fighter is the best choice for the initial early game as it allows you to block a lot of lethal shit and turn it into stamina damage instead, but once you've played the game you're better off leveling strider/ranger for the stamina augments and assassin for the huge fucking strength boosts.

Unless you wanna play magic but that's what healsluts and wizard wanker pawns are for.
