Why should anybody care about the graphics? Think Crysis, that game looked amazing until you actually played it, then you realize how incredibly shallow the game is.

The problem is many gamedevs don't have a sense of decency and totally overuse such effects and post processing so instead of quality use they use quantity and just get straining to the eyes and annoying overall.
Even seemingly overused effects like lens flares can be good if used correctly as a stylistic choice (but sparingly) it's all about the amount and if it is appropriate for the ,moment.

But it makes up for it with it's art direction. That's why dark souls 1 manages to hold up despite shit textures and shit effects, ect.

The network test actually had a different lighting engine from the retail release. Not quite what was in the first demo either but go look up some network test videos.

Most of the sword arts just seem to be giving weapons extra moves that fit their playstyle.
For example, Greatsword's is essentially like a block&counter. Instead of rolling through an attack and responding, you can use its art to hyper armor through the attack with greatly increased defense and then guarantee a counter-hit. Incredibly valuable in PVP on a 2H weapon that can't parry and doesn't really want to attack when the opponent is capable of rolling or parrying. Obviously some arts are going to be more valuable in some areas than other. It's just adding another tool to the arsenal, not giving you a dominant strategy that's flat out better than the rest of the weapon's moveset.
I played every souls game blind and never once needed a guide. The only time I ever looked up how to do something was when an anon told me that there was a way to drain the poison from the boss in earthen peak in DS2.

The Cave of Petrification and Gank in poison DLC, Fire Magic Spam and Blue Smelter Demon Cave in Iron DLC and Rape-deer and 2kat in Frozen Wasteland for the Frozen DLC
The art design is top notch, but just like Dark Souls and Demon's Souls the actual technical detail achieved by the engine is mediocre at best. It's like the same reason Mario Galaxy still looks good today. It's technically nothing special, but the art design is timeless.
