It's simply competitive nature added onto these things to show who's the best at certain things. People are always looking for a challenge. People enjoy things differently than you.

Because seeing how fast we can complete something has existed since at least the modern Olympics. "Hey, let's see how fast I can run 500 meters!" etc.
But speedrunning with gimmicks like "Collect all of this stuff" or "No glitching" is BS. Literally don't. The former's a diversion and the latter is like running through the hurdles in the 400 m hurdles, instead of jumping over them. Slows you down and hurts to watch.
