You are correct, but only the blunderbuss/ludwig's rifle can stun it. A regular pistol can parry it, but if you miss it won't get stunned and will most likely bash your face in. There's also a cage in that little room that it came out of. You can force it to run into the cage and chip at its health while it tries to get out. Also, if you're playing on a build that does not use guns, you have certain magical tools that can stun that big guy. He's also weak to magic, which helps a lot.

It's definitely one of the more annoying enemies in the game, but it's only found in the optional chalice dungeons, fortunately.

This game is a glorified book with nothing else going for it. They should have removed gameplay altogether because it was nothing but an obstacle between good writing sessions because I sure as fuck don't like playing this shitty assassin's creed tier shit with bam ham levels of braindead difficulty. Gwent was infinitely better than any shit they tried to do with this crap.

Thank god the writing made it digestable. Someone should condecorate the writers in charge because they managed to make a game with zero gameplay values whatsoever into an actually good experience. But not for the main quest though because Ciri is garbage character and you spend the whole game chasing her. The game should have also ended at Kaer Morhen. Everything after it was clearly rushed as fuck.

And even then, this game barely qualifies as an RPG. There is little to no roleplaying and only a handful of choices actually do any meaningful shit.
