I was never expecting in a million years that dark souls would be mentioned on /v/. Man, you guys sure do have good taste. I'm humbled by how hardcore you all are.

Undead can't worship good gods, they get poison immunity, torment immunity, cold resistance.
No need to eat, necromancy spell power bonus. On the other hand can't drink potions, fire vulnerability, slow XP growth.
You eat all the time to heal, standard undead resistances, strong, claw hands. On the other hand, they are pretty stupid.
You drink blood to switch between undead and living mode. Living regenerates fast, undead mode is stealthier, has undead resistances but regeneration gets worse and worse
does Guacemelee count?
I mean he dies after the opening and technically comes back from the afterword as a Luchador, he eventually even gains the power to transfer between the world of the living and the dead

So? It's not hard to think of a game in which you're superhuman.
What abilities do Vampire have?
They don't need to eat or drink. Neither do PCs.
They don't need rest and have infinite stamina. Neither do PCs.
They regenerate really fast. So do most PCs.
Superior - but not extreme - strength/speed/endurance. So most PCs to some point.
Most PCs have vampire powers without their drawbacks.

To be fair, their gameplay was non-canon in several aspects.
The PnP VtM revolves a lot more around conversation and survival than around killing monsters DnD style. Many powers don't do crap in combat, but let you live a certain lifestyle; like talking to animals, being everyone's best friend or implanting false memories.
They don't age. They're not indestructible (until Anne Rice went full retard and gave them God powers and made everyone gay).
Undead: Deceased that behave like the living. Clinically dead but animate.

I know it generally requires narrative or character driven games over game play if you want the proper mood and want to avoid the pitfalls of an action game where you play a god, but there are ways of doing it.

There are always ways of doing it. Spiderman is in no shortage of games, and the guy could easily deal with your average Vampire. Not to mention they could simply "nerf" the lore and make them weaker to be more easy to play as.
IMO, the reason for not having vampire protagonist has nothing to do with how OP they might or might not be.

alos, no, undead don't need no flesh and rotting bone. revenants are undead. skeletons are undead. ghosts, wraiths are undead. the only rule for undead is that they die, then their souls raise again, either with or without a body, and not necessarily theirs.
