try games made by psikyo, cave, raizing as these companys pretty much are only famous for their shmups/bullet hells

There are tons of classics that doesnt cover though like
Rtype
the great ragtime show
blazing star
etc

there is also touhou for bullethells which is on the PC. Find the games touhou 6 through what ever the newest release is.

also since im being nice, genesis is great with an arcade stick, hardly matters what you play
