Either go for Terran or Albion. I personally prefer Albion but I never really gotten into Terran. Albion is the newer one so it has slightly more features

Wing Commander: Privateer.

In terms of playability by modern standards there's Ooolite, the X series and Freelancer. FreeSpace 1+2 in case you want mission based pure combat without the open world and trading. That's about all the interesting ones you should look at if you never played anything old.
X series died with Rebirth (do not play that) as they went towards a console gaming approach where X3 was still a solid attempt at universe simulation. X3 AP is the later one and has a few more features but the X3:TC plot is more easy to get into - it's not like anyone plays those games for story though, it's all about trading, upgrading ships and station building.

This lack of competition is ultimately why SC made over 70m US$ off promises alone. You can sell people a mystery box if only there is demand.

Not by default, no. Although there's a bunch of mods that add them into the game. They're easy to add too.
