I'm finally gonna try getting into the Ys series. Starting from the beginning with Ys I.
What difficulty should I start with? Don't want to hate everything about the game before giving it a chance.
Normal. Hard may be too hard right at the beginning of your first game, and Nightmare... well, let's just say there are 2 bosses in Ys I that will have you crying tears of blood if you choose Nightmare. Leave it for a 2nd or 3rd playthrough.

I still don't much care for the new designs in MoC.

Don't listen to the faggots telling you to start on nightmare, while is bearable, the final boss is a Huge difficulty spike, play it on hard mode and after you get the wrasp of it try to do a nightmare run.
Or play normal mode if you are a casual.
MoC is shit, but I'd take its version of Karna any day.
I gave up on Ys I and II because I found the bump combat to be incredibly shitty. Played Oath on Nightmare and never looked back. What a fantastic game.

But anyway, I'm a massive nostalgiafag for the PC Engine designs. The baddies seem to have that aura too, which MoC lacks. Even the SuFami version has it.
I really need to get around to playing the PSP Ys games...

I dunno, I found him pretty easy compared to Dark Fact. Fact frustrated the hell out of me because I knew how he worked after the first 3 fights with him, but it still took a while before I killed him.
I can agree with you that the villains looked better in the PC engine version. Wasn't a fan of their design in MoC.
Ys 1 is really rough. Ys 2 slightly less so but neither of them aged well. Oath and Origin are two outstanding games. Ys 7 is very good. Memories of Celceta is the only worthwhile game on the Vita.
They're similar in that they have the same characters, and similar plots, but they're all pretty different. Different enough anyway.
Dawn is probably the best version, but I liked Mask of the Sun better for some reason.
Completely. There's a shitty remake of the SuFami one for PS2 as well. As the SuFami game was canon until MoC.
The PC Engine game and MoC are ones you should play. The SuFami one isn't that great.

Both Mask and Dawn have the same gameplay but almost completely different plots with few thing being the same.
MoC is different both gamplay wise and plot wise.

Speaking of the villains in MoC, did anyone find Gadis to be the hardest fight in the game because the game ran so slow? I can't do jack shit to him on Nightmare because the game runs at 10 FPS, sometimes lower, for half the fight, and rarely hits 30 even if it's not as low.

Nothing for the first couple of hours, until everything starts repeating constantly. Then all the bosses just start to feel like you're going through the motions. Oh look he's doing the faggy attack I can't hit him during. let's just dodge for a while okay we can fight again now and then you just reach a point where you can't imagine any of the dozen or so bosses you've fought so far are any fun. And then you try online coop to test the theory and people who have grinded far far more than you one shot the bosses you could conceivably fight so you go offline and your hypothesis remains unbroken.
Too many quests where all you do is punch cats too.
If you can get it cheap and maybe you like the awful MonHun genre then you can probably disregard my complaints but I found it made fighting giant monsters with hundreds of spells to pick from so damned boring that it was an achievement.
Nightmare. It's actually pretty easy. Grind each area until you've completed the compendium and make sure you've got the best equipment (if you're having trouble with bosses or enemies this is usually the problem).

I'm at the Ghilda Ros boss inside the cave in Ys Seven and he keeps kicking my ass. That club attack has no wind-up and this is the first boss I'm not certain if I need to grind more on. Does anyone remember that asshole?

How the fuck do I make those emulators work? I don't know if it comes from my Ys iso or from the emulators, but every single one I've tried simply don't want to boot the game.
Ys IV is an iso file and those retarded emulators don't want to run it, they want .pce or .hes files.

I don't know, I personally like it but it's probably my less favorite Ys (it remains a pretty good game). The artstyle is kinda bad compared to what we had before, the game itself it pretty easy (that fact is honestly frustrating, and I'm not even a tryhard), the music is pretty underwhelming by Ys standard (even if some tracks are great). Also, some "scenario" parts are long and annoying.
People also don't like the party system, which is honestly ok even if allies are sometimes fucking stupid.
One of my favorite recent games, but pretty meh compared to the average Ys.
IIRC, there was some official manual or some stuff like that, coming with Ys I&II: it says that Adol dies at 61, after having tried to reach North Pole (and he failed). In fact, he didn't die during adventuring, he spent his old days at some village

Why didn't you do THE CLAW? It even has some funny stuff at the end, and THE CLAW's story is the canon one (even if it doesn't really matter). The character is also fun to play.

Doing bosses with the fire skill is boring, yes.
But honestly, I had a lot of fun using Thunder skill and using the invincibility, and it's way quicker.
Also, I didn't find Origin boring/miserable outside of bosses (maybe some talking parts, but whatever), I guess it's a matter of taste.

Only Ys games I can think of that reigned in the exposition were 1, 2, and 7. And 1 and 2 had the excuse of being on a system where they couldn't craft 30 minute cutscenes.
