In between those clips were clear cuts in the video.

What we saw was not a fluid single copy of the game. The ESRB not seeing the full roster to a fighting game they are rating makes zero sense, especially when you consider that they were shown a handful of the hundreds of trophies in the game showing questionable content. The clip showing the menu was from a different copy, a different save game, or otherwise different point in time.

Not when it moves too fast, and constantly. That's the problem. Most stage hazards are periodic events that are almost unpredictable. That makes them funner; they don't overstay their welcome. On the moving stages, you are constantly, CONSTANTLY moving instead of fighting. Rainbow Cruise is fine, Ice Climber's Mountain summit is not.

The ESRB will have indeed seen the final roster, but we may have just not seen (or got leaked) the part where it gets revealed in FULL, not partially.

You could say "Why would they give the ESRB even a part of video without everything unlocked?" fact is: they gave a video with parts in which the game was not fully unlocked (See All-stars mode locked, not all the trophies unlocked and so on).

There are indeed parts of the ESRB video in whiche every character is there, but we simply haven't seen it yet, because it was not leaked and given to us.
