by the way it starts off very easy, it ramps up in difficulty as you get further in (though never too hard). But going for all the special coins (which you will need to do to see everything the game has to offer) can be challenging.

Those are my main two necessities for a comfy game. I consider something like Disgaea comfy for example.
But sometimes there's other things that can add to the comfy feel. A calming atmosphere that compliments your own. Like those perfect times where it's raining in game and raining in real life. Or playing through a snowy area on a snowy day.

I have played Tera and B&S which are the closest I have found to what I am looking for. But there was still many things in both games that damaged you that could not be avoided.

Black Desert Online has the best combat of any MMO ever (Tera or B&S are a joke compared to BDO). However it's not a theme park, it's more like EVE with lots of grinding and stuff to manage in the game world. I personally found it a bit boring.
Vindictus has even better combat and overall gameplay, also and because it isn't an MMO but an actual action game with coop, but it's also a dead game thanks to Nexon.

The easier one to learn on is easily EU4 if you've never played any GS games. CK2 is arguably better but Paradox has released a fuckload of DLC for both so be prepared to pay out the ass regardless.
