I'd say play them all in release order with only bugfixes or slight graphics mods for the full experience. If you don't want to spend too much time I think Clear Sky is skippable. Can't say anything about the Steam-versions, but the ones on GOG work fine.

wii sold because the wii remote seemed novel at the time; if it had shipped with the classic controller instead it would have been painfully obvious how shit it was against the competition.
the same applies to the wii u, just like is predecessor it was carried by its controller - which was strictly 1 per console.
