They're pretty much the true successor to collect-a-ton games that do their own thing (over and over) instead of riding on the nostalgia of older games.

Animation like that is fucking expensive. For your average, non-AAA dev, doing something like that is going to eat up a huge chunk of your budget that can be better otherwise.
But say you do want to pull this off and you've got the money and the staff to do it. There are a lot of other things that make vidya animation harder than film animation.

Prologue with the MC and his little sister playing in pond. Sister gets dragged under by pic related. Drowns. Days later goes back for revenge killing pic related. Mechanics like Shadow of the Collosus allows boy to get dragged under, stab, and go up for air when needed.
Boy kills first monster. Becomes fascinated with such beasts, figuring they can only get bigger in bigger waters. First real mission is a lake. Quite bigger monster, quite deeper depth. Water is murkier so harder to see it coming. Kill it with onlookers cheering. Become friends with one who happens to have a boat.
He takes you to a nearby fisherman's wharf, where you hear tales of a monster. Kill it. Gain fame. More dire missions start picking up with the fame.

That's what happens when you try to make a "new" game as the nostalgic successor to an old one. The problem with yooka-laylee is that it's TOO much like the old banjo kazooie/ generic 3D plat former games in that not only did yooka-laylee bring back the "best" parts of the old 3D play games it also brought back the very worst parts. People were so blinded by nostalgia that they forgot that over the years their taste in videogames had changed and when they go play YL they only then realize "you know I don't really like platformers anymore" or "now that I think about it banjo kazooie wasn't THAT good". The fact that YL failed to bring anything new to the table and just reused most or all of the old banjo concepts also hurt its quality.
