Rey's staff shit is justified because of what we know about her time before the movie. There is no evidence in ROTJ to imply that Luke was training. In fact, it's implied that his visit to Yoda in ROTJ is the first one since leaving in TESB. The closest thing we get to in-movie implication of his training aside from him suddenly becoming OP is the deleted scene that shows him constructing a lightsaber.
The thing that's bullshit about Rey is that her staff skill is used to justify her lightsaber skill because those are two different kinds of combat.
Luke turning to the darkside just seems unbelievable because there's nothing for him in turning to the Dark side. He has no reason to join the Emperor or take Vader's place. They should've framed Luke's temptation to the darkside more as him misinterpreting what it means to be a Jedi. Like he'd care more about abusing his powers to save his friends rather than using them to uphold order and good.

Well (at least when EU was still intact) they adressed that problem in KotOR 2 and the Mass Shadow Generator or whatever the fuck it was called. It massacred so many people that it actually tore a hole in the Force and left many Jedi either insane or unable to touch the Force entirely.
