No they weren't. They were there to show you what the old man was picturing in his head, which was the reason he pulled the gun. It was there to shock/creep out the audience just as it did the old man. If you remove it you're not shown what effect it had on his mind. It's a great example of how to use the visual medium, rather than having a dude just tell you the story.
People don't really remember or talk about scenes where one character goads the other character into shooting. Those scenes are overdone. Tarantino managed to take such a scene and actually make everybody sperg out over it(even if half of the spergs actually thought it was a flashback, compounding it) and managed to make sure people would remember it.
The whole catch-up monologue read by Tarantino, THAT was fucking unnecessary.

I'd like to see a Nicholas Winding Refn directed Grand Theft Auto set in 1976 New York City about three associates, the trio are called "the losers" who get locked up for nine year and 1985 Miami three guys sent down there for the Gambetti family, killing people left and right and setting up a drug operation for a coke-head Capo in the Gambettis, while carving out there own little operation. "The losers" are played by Oscar Isaac, a gay hitman, Jonah Hill as "Josiah The Jew", Isaac's partner/hitman and led by Tom Hardy as the "Irish-American" the car-jacker. Main antagonist is Stanley Tucci as the coke-head Capo for the Gambettis and Adrian Broly as the dog on the leash for the Miami cartel.

That poster completely misses the tone of GTA V story. It makes it look like some shitty thriller when it's actually more of a black comedy slice-of-life with different arcs.
In fact any attempt to adapt GTA into a movie or TV show would be a disaster, since half of what makes GTA good is the sandbox gameplay and mechanics. A movie would be at best a The Wire ripoff with some black humor.
