I am not a fan also, but it's at least fun to study the culture of metal from afar.

From what I've studied, metal is all about alienating your audience because to do otherwise would be to sell out. Many go as far as to show up to concerts and stand on stage with arms crossed, refusing to play. When prompted to play a song, they simply reply NOOOOOOOOO

It's actually kind of fascinating the anti-culture of metal culture.

My Favorite is "Into the Electric Castle" 6 people are kidnapped from different time periods (There's a Knight, Scotsman, Egyptian, Hippy, Viking, and a Spaceman) and a mysterious voice tells them they have to get to the center of a Labyrinth to go home, but some of them will die.

Oh! And I forgot to mention, All of the characters get their own singer, so it's not hard to follow the story.
Also most of Ayreon's albums are connected. For example, the first album, Ayreon, is about a blind mistral in King Arthur's court receiving visions from the future about mankind destroying themselves in a world war (The War of 2084) And him trying to spread the word to prevent this destruction. Other albums also mention the War of 2084, as well as a few other themes.

Emperor is great if you can stand the black metal style vocals, which I know a lot of people can't. Though they along with Summoning are always "fantasy" bands I'd recommend at least a try simply because the instrumentation in those bands are something really special.

That being said I'd imagine NWOHBM, power metal, and doom metal bands to be the most easily accessible bands for a non metal head, not the same genre that has Grand Belial's Key and Blasphemy in it.

I generally don't like metal, but lately I listen to a lot of Sabaton. They have a certain Warhammer vibe since all their songs are about actual wars: WW1, WW2, medieval stuff.
Also I recommend Gloryhammer, it's kind of a parody of fantasy metal but it's actually freaking awesome metal with catchy on-the-nose lyrics. It's just a fun band.

I have actually used the song Perfection or Vanity for the arrival of a noble court gone to Slaneeshi worship.
And as for the vocals, I like how the guy can really belt it out in classical operatic fashion like Dio when he chooses. Kings of the Carnival Creation is a perfect example of it.

Red Fang are awesome. My brother got me into mastodon (through saints row 2 funnily enough) and then Mastodon were playing in a nearby city with Red Fang supporting but Red Fang actually rocked harder than mastodon. Just getting into the sword.

OP if you're just getting into metal I'd suggest starting with early Metallica, slayer, and megadeth. Anthrax is part of the big four but I just never really liked them.
