I've just assembled a party but we aren't meeting to make characters until later in the month. What can I do in the downtime if I have made a world map and countries?

I've already begun woking on some "adventure guidelines", basically skeletons of quests and a story for the world. What they then want to do is sort of up to them, but it affects their starting positions depending on what races they choose.

I think D&D doesn't really work with sanity. One of the underlying assumptions (that's been getting stronger, if anything) is autonomy over your character.

That said, I saw a suggestion for an exhaustion-like sanity mechanic (i.e. you gain levels of insanity upon being subject to particular effects/failing particular saves).

Insanity levels:
1. Disadvantage on knowledge checks; advantage on athletics checks
2. Disadvantage on mental ability checks; speed +5
3. Disadvantage on saving throws; advantage on strength and constitution checks
4. Disadvantage on attack rolls; speed +10
5. Mental ability checks fail automatically; gain True Sight
6. Complete mental breakdown (character is a crazy NPC)

I don't know if it'll work, but I wouldn't mind trying it out in a game.

I'm new to D&D and would like to know which classes are best to recommend to new players and which setting I should use to start off since I'd be DM'ing

Probably Forgotten Realms. If not, try Greyhawk. I like Eberron though, because I can do what I want with that.

There are no wrong options as far as classes go, unless you're playing 3.5.

For 5e, the most basic class to play is the Champion Fighter. It was literally designed to be the simplest and easiest class to understand and play, and it actually is pretty strong as well.
In general, the hardest part of learning a character is learning all the spells, so if you want something simple, just stick to the classes that have few spells or none.

As for setting, you can just sort of use a generic medieval setting and not worry too much. You can also use Forgotten Realms, because it's one of the more popular ones and there's a fair amount of decent novels and adventures that can expand the setting for you.

There is setting consisting of factions represented by generic fantasy elements: Fire, Water, Air, Earth, Light, Darkness.
And I can't decide on color schemes. I know it sounds stupid, but I just can't come up with proper palette for Air.
You see, colors, just like elements themselves, should have some sort of antagonism between each-other. Red Fire against Blue Water, White Light against Black Darkness. But what to do with Air and Earth? Air doesn't even have a color, and white is already reserved. I thought about doing Light in yellow, but it works against this whole Black vs White theme.

I love my players right now. I gave them a chance to help a man who stole his wife's soul from the clutches of demons and they've decided that Hell will surely pay better than he will. They'll pay even better if the deliver this guy and his wife's soul back into their clutches.

And now the party is working out how to trick them into getting out into the open where the devils can scoop them up.

So rarely do I see evil beyond the scope of "Stab the fucker, take his mints" but the moment when the players went from "Hell might pay a bit better than this guy to get their stolen property back and get their hands on the one responsible" to "This is some Princess Bride, True Love shit this guy is trying to pull. Hell will pay OUT THE ASS to fuck up this shit" just gives you all sorts of evil warm-fuzzy feelings.

Gotta love the LE+LG team ups. I've done that before as a LE warlock with a LG dwarf paladin. The rest of the party was kinda spineless and prone to overthinking every thing they did so there were plenty of times where we had to go "Fuck it, we know what the right thing to do here is."

It helped that the paladin was kinda stupid so he never questioned when things went horribly wrong. Like the time I accidentally destroyed two small island nations with a tide of zombies while saving my character's wife.

Something a little more practical than OP.

A crit in 5e lets you roll double damage dice. In order to avoid the problem of rolling double ones or twos, we assume one of the dice comes up max and roll the other. So, a crit with a longsword does 8+D8+mods damage, for instance.
