there are a lot of options depending on what kind of setup you're interested in and what level of rules complexity you're comfortable.
traveller is an old classic space game that has a lot of rules.
stars without number is an OSR-like that has basically the same setup as traveller but very rules light.
ashen stars is a space investigation game where the players travel around the edge of civilized space and try to help enforce the law. very different approach to the game but has my favorite space combat rules ever.

Lush world with plentiful food? I'd assume a classic line infantry regiment. If the world maintains basic infrastructure instead of for some reason being 18th century farming in SPPPAACCE then maybe mechanized infantry, or at least a lot of tractors, trucks and earthmoveing equipment.
Or you could go to unconformable allegory town and have it be slave-soldiers led by semi-aristocratic plantation owners of a different race.

If lightsabers were real, would turning them off and back on to get past a block be a feasible maneuver? At least more common than its portrayal in media? Pic related is the only time I've seen something close to it.

That sounds retardedly dangerous. That person blocking you is probably trying to get a counter attack in unless they've just blocked you by the skin of their teeth. Like I'm not understanding in your pick why red and blue's post block swing is so high.
Surely that would have gone strait through heterocromia gundam once the saber was dropped, or could have been made to with a slight downward adjustment.

How do you all go about creating your characters?
Make your characters around the sheet, or make the sheet around the character?
Your personal steps when making them, how do you go about making them fit the setting, quirks, what they did in the past?

Find an interesting character facet/personality/archetype to explore in the setting, or something interesting mechanically in the system and play a stock character that I enjoy. I talk with the GM and/or other players to connect the character to the setting/party and flesh them out that way. I don't bother with backstory beyond a motivation for doing whatever the game's about, unless the backstory is important for exploring the setting facet.

I normally think of a Badass Moment and build my character around that.
So like I'll think of some moment in gameplay that I want to experience, be it combat, story, or roleplay related. Generally I try to think of two or three that coincide with eachother.
So, (for DnD 5E) maybe I want to do the classic "Launch someone into the air, slash them a million times, then slam them to the ground" move. Open Hand/Kensei Monk on a race with fly speed or after getting a flight item. Stunning Strike > Grapple > Fly > Next turn full attack.
Insert some moment you want to experience roleplay/story wise and build around those as well (feats, ability scores, backstory)...
By the end of it you'll have a character that might one day live up to the moments you had in mind.
Alternatively (and preferably) by creating a character that could create certain specific moments you like, you end up playing through different moments you didn't anticipate but ended up enjoying as well if not more.
