I have a sister who I want to play in a one-off game of 5e. She insists on playing a sort of witch character, but I went over the classes and couldn't find anything that matched up with the things that she wants to do. What do you reccomend I do /tg/?

A class is just a set of skills that you can flavor how you want. Any caster can be a witch. If she's new to the game pick Warlock.

I need a good catch-all for a character that gets it's gifts from having monster blood in it's veins.
When creating a character players pick origins, which discern why their PC is starting on a higher playing field than the NPCs.
Current Origins Include:
Androids (self explanatory)
Cambion (half-demonic)
Cyborgs (self explanatory)
Nephilim (half-divine)
Scion (descendant of a demigod)
Unnamed (monster heritage, for monstrous types)
> trolls, minotaurs, gorgons, cyclops, yeti, etc
Unnamed (monster heritage, for trickster types)
> fairies, changelings, kitsune, jinn, etc
These origins grant some modifiers and inherent talents, and let you buy talents that share their type: tech, dark, light, etc.

Most of the origins have to do with being descended of something; it needs to be a little more specific, but I know of no catchall for someone born of monsters or fairies.

What's a good system for running low fantasy games? I'm not against having elves and magic and all that jazz, but I want it to be rare.
I personally find more enjoyment in subtle character development, and more down-to-earth plots rather than the (slight hyperbole of) "And then you fly with your griffon and slice the giants head off!"
There's nothing wrong with games like that, I just don't personally like them.

Together of course. The only individuals who can stand up to an adventuring party alone and have a chance are dragons and monsters. A party will curbstomp any individual NPC with class levels you make. Every single time. You see, classes are supposed to work together. That's the real strength of advebturing parties. So if you have a group of NPCs with class levels as collective antagonists, they absolutely must work together if they are to pose a challenge to the heroes.

It's kind of overpriced but it does the job better than stuff that isn't designed for miniature painting.

Citadel paints are good enough, if expensive.
The glue, clippers, and brushes are literally all shit you can buy at Walmart or Hobby Lobby. GW's clippers like, what, $12 or $13? You can get the exact same shit at Walmart in the crafting aisle for $3. Same deal with brushes. And the super glue you'll use to put your dudes together.

Games workshop selling you 50 different colors is the biggest scam on the face of the earth. Get red, yellow, blue, white, black and see how far you get. Then go buy 4 or 5 more colors. That's IT. NOTHING ELSE.

I think the important thing is to still have them focused on what's important. They might be prideful, but they're not going to do something stupid like refuse to work together in a life or death situation.
A well played character of this sort should still realize the time and place for it, and when to shut up and get work done. As well, even a prideful or stuck up character is going to quickly realize that their fellow party members are rather exceptional people, so having them instead focus their bragging towards NPCs fits better. After all, even a particularly smug Wizard is going to have some level of respect for the Fighter that can bench press a dragon or the Rogue that is practically invisible even without magic.
