"Lack of pace" doesn't define him as a player, there's a reason why he was always the first CB on the England team sheet, and him being part of some of the least conceding teams of the PL era isn't just because of good DMs or other defenders, he was still the leader of that defence. Even last season, Chelsea always looked shaky whenever he wasn't in the line-up. The fact that Cahill is regarded as a top class defender is almost entirely because of John Terry making him look good.
