Cause the books are written by scientists who spent their lives breathing and eating their field. This often makes them consider most things a student needs to understand stuff, self-evident. This way the books are written in an incoherent way for newbies but the writers and the reviewers find them perfectly fine

Physics is generally just a little more superficial than math but not enough to lend it some obvious extravagance. At least not without deep understanding.

Then it becomes essentially popsci. The problem with a "simple" explanation is that it ignores some subtle yet important details, which is all well and good if you're trying to explain to a layman. But a textbook is supposed to, you know, actually teach you everything about a topic.

The fact is that physics is not easy to learn. Anybody trying to give you a "physics for dummies" explanation as a serious encompassing explanation is the educational equivalent of a "lose weight fast" scam.
