This is the "2deep4u" spectrum, but they are very enjoyable and a completly different experience than most anime
Other peeps have already pointed to gurren and klk for the over the top crazy action, good if you're into that
Evangelion: never liked it myself but plenty of folks still consider it the pinnacle of the medium, try and see if you agrree
Ebichu minds the house
Anime comedies are usually flat and throw the same fucking joke at you adnauseum. This show is nothing like that. Died laughing at the time and it still hold up
Kenshin: trust betrayal ova
A personal favorite that has been on many top lists for many years. Melodramatic at times but impressive given the inferior source material
Daily lives of highschool boys
This thread is bound to be inundated with bland slice of life shit. This one is actually entertaining and you will see yourself in the characters on many occasions

You seem to know much stuff anon. So Mushishi is similiar to Kino no Tabi? I really loved that episodic format of KnT and the storytelling just felt perfect, it's like you can discuss every episode individually, which isn't that often possible with other shows, atleast that is my experience so far. It is my current favorite anime.
Should I just go into the Yamato remake without watching the original?
Can I watch that Kenshin ova without watching the show or is there something specific I should know?
I will probably watch Ebichu and Daily Lives of Highschool Boys first because I feel like I want to start with something lighthearted

About panty stocking, no its a action comedy. It's more crude, geared towards Americans. I liked it, check out clips on youtube or a trailer. Fanservice-wise it mostly contains it to the transformation scene if you count that. I dunno, the style is too abstract to do Fanservice imo
