I've always liked fairly simple designs, which don't massively overstate what type they are. Things like Flareon (essentially a fluffier Eevee with a red tint), Clefable, Golem (admittedly is a rock, but also a turtle thing), and Persian. I'm sure there are others from other gens that I can't remember right now, I'm not a genwunner.
