You might want to get a crock pot if you like that kind of dish. It takes longer, as in you leave it to slow cooker overnight or during the day 'when you're out working', but all you have to do is throw the ingredients in and let it simmer for a few hours. Comes out really good and is really easy, plus you don't have frying or cooking ingredients separately, etc.

The only thing that will "fall apart" in the crockpot for too long is shrimp. Other meats will just become shreddible and potatoes/carrots/etc usually hold their shape even when cooked 6-8+ hours
For stews, you can just throw everything in and let it cook. Google simple crock pot recipes if you are actually interested in learning about it, or stay dumb and assume one brief post on /r9k/ has all the information about crock pot cooking.
But some things like say peas and celery need to be cooked a very short time. Carrots and potatoes longer and tough cuts of meat the longest. Lentils take a long time too. You'll discolor things unnecessarily and destroy nutrients and taste and what not though taste is subjective.
Steak i cooked yesterday afternoon. I kinda fucked it up but it still tasted pretty good. No veggies though, just a snack.

No op, but when I spend that much time, I usually make sure I make enough to have leftovers. I like cooking and find it interesting and relaxing but rarely have the motivation nowadays.
Not at all. It wasn't very expensive and I'll eat it for at least three days. On top of that, it was absolutely delicious. I actually got inspiration for it from based Keith Floyd's old cooking shows.
