Clubs like photographers. I have friends that do it.
The clubs pay them to take pictures of people either inside or outside of the club to make them feel like celebrities (some of them have like a backdrop thingy) and also to promote the club (people tag themselves in the pictures, their friends see them having fun).
Specific artists and DJ's also employ photographers to go on tour with them.
I'm not sure you make good money doing this so I can't say how this guy is able to make a career out of it, although, many people in the arts are simply trust fund kids so I wouldn't be surprised if that were the case.

Also, it's a following thing. Keep producing quality(relative term...) photos and trying to connect with people/get your work in front of people. If there was some simple trick we'd all be famous
