I have a one way ticket to germany for March 15, starting out in Dresden. I am going in fairly naive and my only goals are to visit farms/alternative communities and hike through the most beautiful nature. Any recommendations?

If you are into wilderness, the Pyrenees is what you want, but the forest of Orleans gave me an impression of a Canadian forest with paths on. The forest of Blois must be better.
The Auverge volcanoes have some cows and one road but let you believe it's the Jurassic again.
We are in winter, so most GR in Bretagne or the Voges should be quiet.
