First post here. This is my main /out/doors knife (not my picture). The handle comes with no sealant, finish or anything of the sort. Will treating it with just polyurethane protect it? Thanks!
Yeah its just personal preference. You can also use boiled linseed oil. Or vegetable oil (blade and wood) or fix'n wax (blade and wood). Or you can really use any furniture / wood sealant you want.

Linseed oil if it will not touch food. USP grade mineral oil if it will touch food. I use mineral oil in lieu of vegetable oil because it can never go rancid.

I use coconut oil or really any oil I run across since I always cleaning them and reoiling on a regular basis. I use lard and coconut oil for my cast iron so there's always a oil basting brush in my kitchen on the wall handy.
Tape the blade, dab some oil on a cloth, and go ham.
USP grade mineral oil sounds promising. What's the longest-lasting sealant tho that's food-friendly?

Polyurethane handles tend to give people blisters and don't give good grip when wet. Any good oil (linseed, boiled linseed, flaxseed, mineral) will do you better.
