romaji doesn't mean anything, ん swings back and forth between n and m depending on the word and the accent of the speaker. it's not equivalent to the english "n".

you'd be more likely to pronounce コンビニ as "combini" versus "conbini" due to the hard "bi", so i guess maybe that carries over. it's kind of like how to sometimes see people write 先輩 as "sempai" rather than the "senpai" you might know from all the memery.
any-non-latin-language -> english romanizations are never trustworthy when it comes to pronunciations.
