Buying my first violin and I need advice on a few prospects. Mainly, I want to play some gypsy-style jazz and classic paganini.

I'm a guitar player, acoustic/electric and with some piano background, bass for fun, you know.
Coming into the violin world, I first realized what vast amount of snobbery that's fundamentally marking the business.
Wanting to avoid overpriced "brand violins" and just get a good one, I feel I need a bit of advice here.
Talking guitars, it's easy to point on cost - item ratio, electric guitars have different settings, range of tone and setup.
Meanwhile I find NO variation among acoustic violins, yet the price vary something insanely AND second-hand violins seems to be the most expensive? wtf?

Can someone explain to me SPECIFICALLY what this guy innovated and what is great about him?
I'm familiar with the HE MELDED POETRY WITH ROCK meme but I can name dozens of pre-Dylan folk, blues, country songs with beautiful and poetic lyrics and then I listed to his "brilliant" records and it's "The sky's not yellow, it's chicken!" and "Johnny's in the basement, mixin' up the medicine / I'm on the pavement, thinkin' about the government!" and feel like I must be missing something.

I don't know, I just like him. I have them all and while certain albums are weaker than others I've just never heard stuff from Bob Dylan that I flat out disliked. It just never happened. Modern Times is one of my favorite albums ever.
