first of all, write down your vivid imaginations of this music into pseudo-compositions.
make friends with guitarists or instrumentalists and get them on board with your idea or just work towards developing skill or mastery for those 'normal instruments' you're talking about.
also, any DAW will do for the the type of person you describe yourself as, they don't require performance or dexterity, just planning

All instruments can play happy songs. It's not the instrument, but the notes. If you like the sound of a particular instrument and think it's "happy", pick that one. Nobody else can tell you what happy sounds like to you.

Why bother learning any instrument other than piano? It's one of the few instruments that actually works well to perform solo on, and it's easily the best instrument to compose original music on.
If you're already a pretty good pianist then sure, have fun learning some other instruments but piano should probably always be the starting point.
