I'd say read a lot. There are some great biographies out there, listen to the classics and maybe become familiar with some standards.
Understanding the history of Jazz and its evolution will also help you gain a greater appreciation for the genre.
I don't know if this will help, but I listened to a lot of Blue Note when I first got into Jazz.

Well you need to learn whatever DAW you're using first, most of the time MIDI controllers have all these buttons for DIGITAL manipulation. So as for triggering samples you can't really do that unless of course you're DAW allows you to.
An analog sampler however is something that can trigger samples in a breeze.

i like some of it, but there's a lot of shitty dad rock

it's a silly and perhaps vague term, but people get way too worked up about it
