I'm guessing normal would just mean yourself?
For example, someone who is already athletic would be better suited as pegasus, while someone strong and who knows how to grow crops would be good as an earth pony and finally someone who is smart would be a unicorn.
So, if a person is already smart enough, given time, they could plausibly come close to or even surpass Twilight's amount of power and knowledge.
If that's true, regardless of the challenge, I would probably be a unicorn and just be a hermit like Moondancer.

That might take a really long time. Twilight is gifted in magic, you'd be a normal pony who just so happens to be able to use some magic. Your also define by your special talent, which would mean that if you don't have a cutie mark for magic, your most likely not going to have strong magic.

It's like comparing a normal person to a professional sports player, there are limitations that you can do and they are just naturally gifted to get there much faster than you(if you can even get there at all).

Pegasus would easily be the best choice here(out of ponies), unless you want to gamble with Unicorn.

Well, a changeling does need to be adaptable in order to fool others.
But you most likely wouldn't want to be a changeling unless you liked deceiving others.
Adaptability is in itself, adaptable, it doesn't necessarily need to be used for that one purpose.
For example, a pegasus or griffon would need be adaptable to different flight conditions.
While earth ponies would need it in order to grow different crops in different climates.
