I like seeing new covers to this book even if they aren't always good. I can take a really harsh cynical approach and say it's biting the meem about IJ being a studious effort that increased my sticky note budget 10x (xD) but I like the colors.

My personal fav is the BR edition just cause it looks so cool and the image itself isn't entirely unrelated. It's a bit modernish.

Infinite Jest is his most accessible book despite the length and the whole endnotes gimmick. Though if you want to get a feel for what his writing is like before jumping into a 1000 page book, I'd say google some of his essays/articles like "A Supposedly Fun Thing I'll Never Do Again" I think the original harper's article version is floating around as a pdf.
