Aliens are invading so you run a team whose job is to fight them by dissecting,interrogating, and adapting the tech of the aliens to go from shooting bullets to shooting lasers, to shooting plasma and crystal shards.
Also, genetic modifications and mech suits are involved.

They do have their own militaries, it's just that they bring you in to deal with the shit that only xcom can deal with because xcom is the organization with all the tech and the best personnel.
They never justify why it's only xcom that can handle the missions you're give but anyway here's the real answer.
It's a video game.

And if it makes any more, or less sense somehow, in the old games the number of soldiers you could send was a lot higher, and they were 10 times as expendable.
1 and 3 are tied for my favorite, with the remake a close 2nd.
Play the original, you can send swarms of rookies to die en mass against the alien invaders.
You can recreate 'Nam by landing your ship with 20 squaddies and have an alien send an rpg straight up the loading ramp and kill everybody.
By building huge "tactical surface fighters" 20m tall despite the fact they have an operational ceiling of 100m if any Anti-Air class aliens are operating.
I'll also give them tons of armour despite it providing minimal defensive capability against said aliens.
Finally I'll make all the pilots female not because of fanservice but because males have all died (except for all the male guards, mechanics, politicians, infantry)
You don't, unless you also happen to be capable of flight between stars.
The material and energy sciences that it takes to fly between stars in a reasonable amount of time. It would entail such a huge gap in technology. That a simple alien child's toy, would look like magic to us.
none of that happened in the series. they even make it a point about how newer generation TSFs have much less armor because the focus is on mobility.
There are also plenty of male pilots, the MC is one of them.
You just need one sniper, I had my best soldier Enrique Iglesias delivering the fist of god special with exactly those perks.

I don't like the design in the 'first' X-COM. Everything is fuck hueg and all the dudes look like they're from Gears of War.
But now all dudes look like twinks with no muscle mass in the new game.
Models and guns were fuckhuge in the first game because it was designed for consoles. Because new game is supposed to be seen from a computer screen they could make the models smaller and detailed. Not their fault that you question your sexuality so much desu.
In fairness, they're no more fuckhuge than Warhammer 40,000. Model scaling like that is intended to make it easy to distinguish what each unit is equipped with at a distance, since you're posting from an overhead, tactical perspective. The choice of platform doesn't really enter into it.
