best armor by far. tempered steel full plate armor is waaayyy better than just chainmail or bronze. most technologically advanced weapons made from superior quality tempered steel. trained in both battlefield combat AND individual dueling.
knight vs spartan, spartan has a spear, a shield that's shit for individual combat, and a breastplate and helmet. Crushed easily by a poleaxe to the face, whereas his spear won't do much to the knight's armor. Viking was the ancient equivalent of today's somali pirates. Kinda scary if you're a bunch of farmers on the coastline, but a guy who spends most of his time farming and then once a year grabs a spear and shield and if he's lucky a helmet would get fucked vs a fully armored and armed knight. Roman was at least a professional soldier (after a certain point in history), but same issues as previous guys. Armor is shit-tier compared to full plate, weapons are shit at killing the knight in full plate.

the "knight" class in early Rome was the Equites, the Triarii were just the vets.
remember that to get to Triarii, you had to have been a Principe, and to be a Principe, you had to have been a Hastatus, and if you were a modest person, you had to be a Velite before you could even afford to fight with the Hastatii.
Equites were people who had the money to own horses and could take those horses with them to battle so they didn't need to rise through the ranks. They also only participated by preventing flanking actions and chasing down routing enemies.

Viking- basically have to be from Noble Birth and therefore treated really well. Have the best weapons, fight numerous different enemies, see the world (they made it to North America and tons went to Asia and the middle east to trade.)
Why NOT the others?
Spartan- Spartans were nothing like the chiseled rock hard men in the movies. They were described as thin and clean shaven. NO BATTLE BEARDS. Fight mainly other Greeks, stay mainly in Greece. That, and have to live a shitty life from age 7, until you finally "become Spartan enough." I'm also not really into the idea of being Athens', then Rome's sacrificial lamb at various point in history.
Knight- I just hate that time period. I also don't want to risk being sent on a Crusade, inna sandbox, wearing all that fancy armor. I'd also be forced to be a Christfag.
Roman Soldier- I don't feel like being sent to die to Barbarians up north, or Ancient Kebab to the Southeast. Nor do I want to be stoned to death if I fuck up, subject to being dragged into civil wars, numerous religious conversions, being used as cheap labor, or living to see the day that Brenus, Attila, or any of the numerous people who BTFO the Romans. I.e. my chance of survival as a roman soldier is way less while in the line of duty.

you only serve for a few years and once you're done you win free lands and status. Unless you pick the literal worst possible moment you will likely never be in a real battle.
Auxiliaries weren't Romans, they were recruited from foreigners, peregrinii and conquered nations. They made a bulk of the manpower but were not the principal fighting force.
and there were very, very few moments in Roman history in which all legions were commited, or all fronts were under hostilities. You could be posted in a comfy colony in the coast of Hispania or North Africa instead of being cold as fuck and dealing with Germanic faggots. And if you were, you'd rekt them in literally every battle, because historically the only defeats Rome suffered in it's expansion to northern Europe were ambushes like Teutoburg. Rome could have reached Scandinavia itself if it had been economical.

You'd have good personal wealth, which may not necessarily apply to any of the others depending on the period of time you enter into their cadre's, respect and official rank above that of disposable welp, access to higher education, better training than the general soldiers of your own kingdom. Just better everything.
It's not even remotely close outside of your own personal preference. Oh, and the likelihood of being white as a Knight is much, much greater than the odds of being white as any other. Romans/Spartans give you good odds of being a slave. Vikings = definitely white, but they're literally trailer trash next to Knights.
