There are quite a few, depending on how picky you are; in fact, there's a torrent on Nyaa specifically for jazz arranges. One of my personal favorites is Touhou Bakuon Jazz 4, by the Tokyo Active NEETs. There are also Shibayan's Bossa Nova albums, if you're looking for something more chill and cozy.

I play on easy mode every now and again just to watch myself fail and have a strange kind of violent panic attack relating to my strong sense of inferiority. But that happens to me with a lot of different things so it doesn't matter.

I enjoy it by spending half the day in bed imagining fugging my favorite 2hu.

I draw or animate my waifu in MMD, scan, edit or typeset her doujinshi, and just sleep comfortably with my daki of her. Used to listen to lots of Touhou music but havent really downloaded anything new in a long time that interested me.

I play the games until failure after failure fills me with hatred and self-doubt and then I find a 2hu-themed doujin to fap to and eventually the process repeats.
The secret to enjoying touhou is hating yourself.
