Like these anons said, definitely EU and CK. Two of my favorite games, and warband is up there too. /int/ used to have threads about paradox games, but I'm not on here as often so I'm not sure if that still happens.

Best way I found to get into a paradox game is to actually play the tutorial, and then watch a youtube let's play. They give you a good sense of which mechanics to really pay attention to, and it's a lot less boring than reading a wiki. arumba07 is pretty popular, give him a shot. Also, watch some of those videos before you buy. If it looks boring as shit, it's a good sign you won't like the game.

Also, the kids at grand strategy general in /vg/ have a torrent of all the games with the dlc. Their official stance is that paradox is a shitty company that doesn't deserve your money, due to the outrageous amounts of dlc needed to make some of the games playable.
