After my master degree (engineering, human factors) should I rather try to move to the US or Canada? Where can I live a safe and comfy life? Or should I just stay in Germany and hope my future daughter won't get raped?

Look into getting an engineering job at the Kohler Company. It's based in eastern Wisconsin and its headquarters is in golfing-nirvana. People here are so close to the Canadian border that some of the politeness has seeped into our water supply. It is super safe here as well as friendly with plenty of German immigrants already here.

everyone will say Canada because they think it's some Anglo wonderland. It's not.
It's quite literally USA lite and many Canadians come here for work because their economy is in the gutter. I'm sure you'll believe the memes that everyone in this country has a gun and will kill you but more than half of our country is rural, small towns with majority middle aged white people. With out current economic downtown most engineers are out of a job. Unless oil goes back up Engineers should stay away.
In terms of job comfort you'd be happier here as an employee due to better workers rights.
