I'd think Latin but they do speak some German
In my experience (lived there for 3 years), they are very emotional, like other Latin people; however, their romanesque aspects are tempered by a deep-seated Germanic autism.

Bretons have their special snowflake celtic-flavored latinism, and the north has a tiny bit of flemmish-flavoured latinism
