How hard is it to become a biology/animal illustrator for a known institution?

Almost impossible. I've talked to a couple of professional wildlife illustrators and while they were all encouraging, it's not very likely that you'd be able to do something like that for a living, especially not in house. Very few institutions hire full time illustrators because they don't need them as much.
It's also highly recommended to get a related degree, much more so than any other branch of illustration.

glad I'm not the only one out there like this, with color i don't know where to start or the basics of painting/coloring.
with lineart it is simple learn boxes and basic shapes, then fill in the rest with detail. but slowly learning color and how it works with each other.

Learning to paint in photoshop right now, I have been putting it off for way too long.
As of now my drawing skills are stronger, but I definitely wouldn't put them on hold for painting. When painting, you're somehow drawing anyway. Either by a preliminary sketch/drawing or when blocking in with a brush, it's like drawing with a wider tip.
It's frustrating but also cool. It's almost a magic moment when you put some different values together and start blending here and there and it starts to turn into the illusion of a 3-dimensional form, which is lit a certain way.
Since when drawing, you're basically rendering with 2 base values (pencil and paper/canvas), I find it helpful to start off with a very limited value range, maybe just two, for light & shadow (against background). Even a few more can easily get overwhelming. Then it's about lighting planes consistently. It really tests your knowledge of the form you drew.

I really like the appeal of the 'tumblr style' of expressions.
I personally have trouble making expressions and I guess I have a strange fear of deforming the face form the basic 'dead look' of proportions laid out across teh face.

Your example is a pretty Disney-lookin' example to me. I dunno about Tumblr because I don't into blogs.
You're on the right track - The image you posted is a good example of expression practice.
The face is redrawn each time. Don't do the meme thing where you copy and paste the same "head" onto a page and draw different eyes/nose/mouth on it to get expressions. That's not only lazy, you don't learn shit.

You don't throw caution to the wind. Especially early on, each "good" drawing will be careful, deliberate, and time consuming. Early on, you don't "crank them out"
Many people fall into the bullshit meme of "loosening up" and casually flicking lines onto page after page and when the sketchbook is full they wonder why they're not any better than when they started. Precision is imperative. And difficult.

I dunno, there's lots of things that go into it. If the output is recognizable and relatable, it's good.

They support each other. That's why it's important to redraw the face for each practice expression.
1. Watch for expressions you like, (Life, movies, animation, TV) remember them, draw them accurately. You will learn what facial features go where for what, and how to move them without ruining your consistency or proportions.
2. Take your practice expressions and translate them onto your original characters. When you can do this and maintain consistency and accuracy in your own characters, you win.
...I'm cheating because I have a photographic memory, but it's just as much a handicap when I'm trying to do something original. All the images in my head get in the way of the nascent imagined ones.

OP here, I started this small chart playing with the idea of expressions some of them I don't like others are 'okay' they are markedly better than what I usually draw but not by the standard I'm seeking. I think one of the best places to start is eye shape. How does one construct an eye in that cartoon 'Disney / tumblr Style' style?
I've been studying an animation and will be updating with my attempts to emulate what I see.

skull goes like a bow. out from top to nose and then in again from nose to chin. your skull goes too much out where it should go in. the teeth part goes out like a monkey, but thats on top of the overall bow shape.

When I was young I took criticism really well and would always listen to what people told me. I had an iron skin and insults didn't bother me. Now I find if someone is critical it can kind of hurt and I often disagree with what they say.
