If you want to move a lot of money around like paying for trade goods, it's too risky carrying that much cash
Even today, large movements of cash have been targets for robbery - eg when factories paid in cash you had payroll robberies
So you had promissory notes but you needed to be able to trust that the banker at the other end would honour that note
That's where Jews came in as the other banker was most likely a relative and they were happy to pass on money owed etc down the family line
