Are there any other YouTube channels that are actually run by professors or people with graduate degrees? There are a few good history and linguistics channels but they aren't open handed with their sources and they're usually hobbyists.

Matt Easton should probably qualify. No graduate degree (although I'm not sure why; he could easily have channeled much of his research into a thesis or dissertation), but he's been doing valid historical research about HEMA for 20 years. He's one of the few history/weapons/HEMA youtubers that talks about original research and isn't just repeating a Wikipedia article.
