Apple didn't specify that you have to tick off the "Automatic date" option and then set the date to the earliest you can and then exit Settings and only then the 1970 option will appear

No it's not, I was in the thread and made that image. It bricks your phone until power is lost. 1970 of the year before digital, so if the system clock is set to that time, (under 0, aka -1) system is bricked

Probably because you try to change the date too far in one go that it's not a legitimate date change.
