kali is just a distro for pentesting only. That means it is a normal linux distro which is special configured to use all the programms on it. The special configuration open many security holes on the distro. Because that you don't run Kali as root, too.

I have never seen an Arch Linux on servers in my entire life. However, my colleague, a mature 35yo sysadmin, once mentioned that he knew a guy who used a Gentoo on his servers. Of course, if we're talking about hipster stuff, then Arch is superior, but in that case I have even better solution for you: Windows Server.
