It's better to install your favourite distro and manually get the tools that you need to get the job done and avoid useless bloat.

kali is just a distro for pentesting only. That means it is a normal linux distro which is special configured to use all the programms on it. The special configuration open many security holes on the distro. Because that you don't run Kali as root, too.

I have never seen an Arch Linux on servers in my entire life. However, my colleague, a mature 35yo sysadmin, once mentioned that he knew a guy who used a Gentoo on his servers. Of course, if we're talking about hipster stuff, then Arch is superior, but in that case I have even better solution for you: Windows Server.

Kali is the most popular penetration testing platform in the world, no it is not a meme. Also, the OSCP is the most respected security cert among non-HR people aka: actual people that do the work.

If you mean 'should I run Kali as my main OS on my desktop' then the answer is no and in that case yes it would be a 'meme', if people really are doing/suggesting that.
