Oh don't worry, I use libvirt+KVM as well. I ran into issues with Proxmox. The most annoying was the web interface would decide to stop working at random. I switched to VMWare because I liked the manageability of Proxmox but couldn't deal with the downtime.

No you can't, you can only temporarily defer updates now. If you do not install them within a certain time period you lose your security updates. That is very different and caused by the philosophy switch to Windows as a service. The only exception to this is if you have a volume licensing agreement with Microsoft and then Enterprise copies can receive security only updates.

In it's current state Windows 10 is not the better choice from the power user's perspective simply because it doesn't add enough meaningful features to justify the update, especially with all the reported driver issues and upgrade failures. Many of the promised additions to Edge like add on support have yet to go live, and Direct X12 won't see use for years still. Unless you really love Saas features, or Cortana there are no current compelling reasons it is superior unless you want something new because it is new.

What I mean by lacking is it lacks user control, certain GPO setting are completely non-functional unless you have enterprise edition, and the whole debacle with updates. Let's also remember the forced telemetry even on the "off" setting, sure it isn't spying but it doesn't respect the user's choice like older Windows versions did. An offline OS with as needed online applications is a superior model from a power user's perspective then an online OS with features you can't fully control.
