SLI seems like it should work though, right? You could have one card per eye. Although I guess nothing will be coded or optimized that way, or the eyes could get out of sync and be really disorienting, so its probably not worth it.

Nope, there's no driver level code for per-eye rendering, it will be entirely down to the devs.
I pretty sure 99% of them will not waste their time knowing that there's no driver framework at all from nvidia/amd meaning they would have start completely from scratch.
